Estrellita's Culinary Arts program began in 1983 in order to provide food service training for Hard-to-Serve Youth (those students who have a learning disability, pregnant or parenting teens, or those whose educational attainment is one or more grade levels below that which is appropriate for the age of the individual).  This program was jointly developed and funded by the Sacramento County ROP and the Sacramento Employment Training Agency.  Each year 28 students participate in this program.  They are required to complete a list of competencies that have been developed by their ROP instructor before they can be placed in a work related job.  The students are trained in food preparation, cooking techniques and serving or waiting on tables in "Chez Estrellita Restaurant" which is open to the general public for lunch on Tuesday and Thursday.  The dining room seats approximately 32 people at any one time.  It is a popular choice for lunch in the community and reservations are required for those who wish to dine there.  Once students have completed their competencies, they are placed in food service related jobs within the community.  An additional component of the program is the ROP Community Classroom.  This is a joint partnership with private employers who provide students with a minimum of two weeks of unpaid training in the industry.  Graduates of the program have successfully gained employment in a variety of food service positions and restaurants in the community.
